Bar 'Beck' Coa Tacos

I accidentally came up with these scrumptious tacos a couple days ago. I made roast but thought it was a little dry and wondered what they would taste like with lime and cilantro. I thought of a barbaco style taco. We call them Bar 'Beck' coa Tacos.

 What you  need:
1 can of Chipotle Rotel Diced Tomatoes
1 roast (anysize)
Beed or Chicken broth (enough to cover the roast)
Season salt and pepper
Tortillas
Cilantro
Onions
Limes
Avacodos (optional)

All you do is get a roast and put it in a crock pot with a can of Chipotle Rotel diced tomatoes, enough beef or chicken broth to cover, add season salt and season pepper. You let it cook on high for about 3 hours then on low for at least 4 hours. If your going to be gone all day or want to cook overnight you could cook it on low for 6-8 hours. When its all done you take the meat out and put it in a food processor with some of the juice. We added the meat mixture to tortillas with sliced jalapenos, fresh cilantro, onion and lime juice. Not to toot my own horn but whoo hooo these were really good!
